My family was invited to another families house for dinner recently. I hate showing up empty handed, even though I was told everything was taken care of! I knew a dessert would be accepted regardless!
This family has some dietary restrictions and I have been looking for healthier recipes for my family too. I did a quick Google search for paleo rhubarb cake…AND OH MY! This recipe I found was sooooo good! Every person loved it, even the kids!

But I tweeked a few things. I used a bundt pan, I used chopped rhubarb that was frozen instead of strips, and then after it was done cooking topped the cake with a little bit of the pureed strawberries.
It was delicious! Please if you love strawberry rhubarb desserts as much as I do you should try this one!

- 4-6 stalks rhubarb, peeled
- 1 cup strawberries, pureed
- 4 eggs
- 3/4 cup coconut milk (canned, full fat)
- 1/4 cup honey
- 1/2 teaspoon vanilla
- 1/4 teaspoon salt
- 1/2 teaspoon baking soda
- 1/2 cup coconut flour
